  • 1 cup green lentils, rinsed
  • 4 cups fresh cabbage, chopped
  • 1 can (13.5 oz) coconut milk
  • 3 cups low-sodium vegetable broth
  • 2 tbsp curry powder
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 medium onion, diced
  • 2 cups fresh spinach (optional)

Instructions

  1. In a large pot over medium heat, saut? diced onions in oil until translucent. Add minced garlic and grated ginger; cook for about one minute until fragrant.
  2. Stir in curry powder and cook for another minute to release the spices' aroma.
  3. Add chopped cabbage and stir to coat with spices; cook until slightly wilted (about 5 minutes).
  4. Pour in the vegetable broth and coconut milk; bring to a gentle simmer.
  5. Add rinsed lentils, bring back to a boil, reduce heat to low, cover, and simmer for approximately 20 minutes until lentils are tender.
  6. If using spinach, stir it in just before serving until wilted.
