- 4 flour tortillas

Instructions
- Preheat your oven to 400?F (200?C). Peel and cube the butternut squash. Toss with olive oil, salt, cumin, and red pepper flakes on a baking sheet. Roast for 25-30 minutes until tender.
- While roasting, heat olive oil in a skillet over medium heat. Saut? the chopped onion until soft and golden brown (about 10 minutes).
- Mash the roasted squash slightly in a bowl. Add saut?ed onions and shredded cheddar; mix well.
- In another skillet over medium heat, place one tortilla flat, add filling to half, fold over, and cook for about 3-4 minutes per side until golden brown.
- Cut into wedges and serve warm with salsa or guacamole.
