Description

  • 2 pounds butternut squash, peeled and sliced into 1/4-inch rounds
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1 cup shredded Gruy?re cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375?F (190?C) and grease a baking dish.
  2. Layer half the butternut squash slices in the bottom of the dish. Sprinkle with half of the minced garlic and top with half of the Gruy?re cheese.
  3. In a bowl, whisk together heavy cream, salt, pepper, and nutmeg. Pour half over the squash layer.
  4. Repeat layers with remaining squash, garlic, Gruy?re cheese, and finish with the rest of the creamy mixture.
  5. Cover with foil and bake for 40 minutes. Remove foil, sprinkle Parmesan on top, and bake uncovered for an additional 15-20 minutes until golden brown.
