Description

  • 2 lbs butternut squash, peeled and sliced into 1/4-inch rounds
  • 1 cup heavy cream
  • 1 ? cups grated Gruyere cheese
  • 3 cloves garlic, minced
  • 1 tsp freshly grated nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375?F (190?C) and grease a baking dish with nonstick spray.
  2. In a large bowl, mix heavy cream, minced garlic, salt, pepper, and nutmeg until well combined.
  3. Layer half of the butternut squash slices in the baking dish. Pour half of the cream mixture over this layer and sprinkle with half of the Gruyere cheese.
  4. Repeat the layering process with the remaining squash slices, cream mixture, and cheese.
  5. Cover with aluminum foil and bake for 45 minutes until tender. Remove the foil and bake for an additional 15-20 minutes until golden brown.
