Instructions
- Preheat your oven to 350?F (175?C) and grease a loaf pan.
- Roast butternut squash by cutting it in half, scooping out seeds, placing cut-side down on a baking sheet, and baking for about 30 minutes until tender. Let cool before scooping out the flesh.
- In a mixing bowl, combine mashed squash with melted butter and sugar until well blended. Add eggs one at a time, mixing thoroughly.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add this dry mixture into the wet ingredients until just combined?avoid overmixing.
