Instructions
- Prepare the filling: Boil potatoes until fork-tender, cool, peel, and mash. Mix in green peas, cheddar cheese, cumin seeds, chili powder, and salt.
- Roll out the puff pastry on a floured surface into rectangles; cut into 4-inch squares.
- Place 2 tbsp of filling in the center of each square. Fold diagonally to form triangles and pinch edges to seal.
- Heat oil in a deep frying pan over medium heat. Fry samosas until golden brown, about 3 minutes per batch.
- Remove with a slotted spoon and drain on paper towels.
