  • 1 cup bok choy, chopped
  • 1 medium carrot, diced
  • 2 green onions, sliced (white and green parts)
  • 3 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon sesame oil (toasted preferred)
  • 3 cloves garlic, minced

Instructions

  1. Wash and chop bok choy, dice the carrot, and slice the green onions.
  2. In a large skillet or wok, heat oil over medium-high heat.
  3. Add garlic to hot oil until fragrant (about 1 minute). Then add bok choy and carrots, cooking until tender yet crisp.
  4. Add cold cooked rice to the skillet and break up any clumps while mixing.
