  • 2 medium beets, peeled and sliced
  • 2 medium parsnips, peeled and sliced
  • 3 medium carrots, peeled and sliced
  • 1 cup heavy cream
  • 1 ? cups shredded sharp cheddar cheese
  • Salt and black pepper to taste
  • 1 tsp fresh thyme leaves

Instructions

  1. Preheat the oven to 375?F (190?C). Grease a large baking dish.
  2. Peel and slice the beets, parsnips, and carrots into uniform thin rounds.
  3. Layer the vegetable slices in the greased baking dish, alternating colors. Season each layer with salt, pepper, and thyme.
  4. In a bowl, whisk together heavy cream with half of the cheddar cheese. Pour over the layered vegetables.
  5. Top with remaining cheddar cheese for a delicious crust.
  6. Cover with foil and bake for 45 minutes; remove foil during the last 15 minutes to brown.
