Instructions
- Preheat oven to 400?F (200?C). Wrap beets in foil and roast for about an hour until tender. Cool, peel, and dice.
- In a food processor, blend roasted beets, tahini, garlic, lemon juice, salt, and pepper until smooth. Add water if needed for consistency.
- In a bowl, combine shredded carrots and cabbage. Drizzle with olive oil and season with salt and pepper; toss well.
