  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 dried bay leaves
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Set the Instant Pot to saut? mode. Add olive oil, onions, and garlic; saut? until fragrant (about 3 minutes).
  2. Stir in carrots and celery; cook for another 3 minutes until slightly softened.
  3. Add chicken thighs, salt, pepper, thyme, and bay leaves; mix well.
  4. Pour in the chicken broth ensuring all ingredients are submerged.
  5. Close the lid and set to high pressure for 10 minutes; ensure steam release valve is sealed.
  6. Once cooked, carefully release pressure using the quick-release method. Remove bay leaves before serving.
