- 1 lb lean ground beef
- 1 cup long grain rice
- 2 tbsp taco seasoning
- 1 cup shredded sharp cheddar cheese
- 2 cups low-sodium chicken broth
- 1 medium onion, diced
- 1 bell pepper, diced
Instructions
- Set your Instant Pot to saut? mode. Add a splash of oil and saut? the diced onion and bell pepper for about 5 minutes until tender.
- Add the ground beef to the pot, breaking it apart as it browns for 6-8 minutes. Drain any excess fat.
- Stir in taco seasoning until the beef is well coated.
- Add the rice and chicken broth; stir to combine.
- Close the lid and set to pressure cook on high for 5 minutes. Allow a natural release for 10 minutes before opening.
- Sprinkle shredded cheddar cheese on top, close the lid again for 2 minutes to melt the cheese.
- Serve hot and enjoy!
