  • 2 cups ginger snap cookies, crushed
  • ? cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ? cup sour cream
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1 pinch nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350?F (175?C). In a mixing bowl, combine crushed ginger snap cookies and melted butter until well mixed.
  2. Press the cookie mixture into the bottom of a springform pan to form the crust. Bake for about 10 minutes until slightly golden. Allow to cool.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until combined.
  4. Add sour cream, eggs (one at a time), vanilla extract, ground ginger, cinnamon, and nutmeg. Mix until smooth.
  5. Pour the filling into the cooled crust and spread evenly. Bake for approximately 50 minutes until set but slightly wobbly in the center.
  6. Turn off the oven and leave the cheesecake inside with the door ajar for an hour before removing it to cool completely at room temperature.
  7. Chill in the refrigerator for at least four hours or overnight before serving.
