Ingredients

  • 8 oz dark chocolate (at least 60% cocoa)
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter (room temperature)
  • 1/4 cup cocoa powder (for coating)
  • Optional flavorings: 1 tsp vanilla extract or liqueurs

Instructions

  1. Finely chop the dark chocolate and place it in a heatproof bowl.
  2. In a saucepan, heat heavy cream over medium heat until just simmering; pour over chocolate and let sit for 2 minutes.
  3. Stir until smooth; mix in optional flavorings if desired.
  4. Cover and refrigerate ganache for about 2 hours or until firm.
  5. Scoop out chilled ganache and roll into balls using your palms.
  6. Roll each ball in cocoa powder or your choice of coating.
