  2. Melt chocolate and butter in a heatproof bowl over simmering water until smooth.
  3. Whisk egg yolks with half of the sugar until pale; mix in melted chocolate and vanilla.
  4. Beat egg whites until soft peaks form; gradually add remaining sugar until stiff peaks form.
  5. Gently fold egg whites into the chocolate mixture in thirds until no streaks remain.
  6. Pour into ramekins, filling three-quarters full. Bake for 12-15 minutes until puffed but slightly jiggly.
