  • 2 cups whole milk
  • 3/4 cup granulated sugar (divided)
  • 3 large eggs

Instructions

  1. Soak tapioca pearls in cold water for 1 hour.
  2. In a saucepan, heat whole milk and 1/2 cup sugar over medium heat until dissolved.
  3. Stir in soaked tapioca pearls and cook for 15-20 minutes until thickened.
  4. In a bowl, whisk eggs, vanilla, and cinnamon. Gradually mix in some hot tapioca mixture to temper the eggs, then combine everything back into the saucepan.
  5. Pour into a greased baking dish and bake at 350?F (175?C) for 45 minutes until set but slightly jiggly.
  6. Cool slightly, then mix remaining sugar with melted butter and sprinkle over the pudding. Use a kitchen torch to caramelize until golden.
