  • 1 cup green or brown lentils
  • 4 cups vegetable broth
  • 1 tsp spirulina powder
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large pot over medium heat. Saut? onions, carrots, and celery until soft (about 5 minutes).
  2. Add minced garlic and saut? for an additional minute.
  3. Stir in rinsed lentils and vegetable broth; bring to a gentle boil.
  4. Add spirulina powder, thyme, and bay leaves; reduce heat to low and simmer uncovered for 25 minutes or until the lentils are tender.
  5. Remove bay leaves before serving hot.
