- 2 pounds beef chuck roast, cut into 1-inch pieces
- 4 cups beef broth
- 3 medium carrots, sliced
- 3 medium Yukon Gold potatoes, chopped
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1–2 bay leaves
- Salt and pepper to taste
- Olive oil for browning
Instructions
- Gather and prepare all ingredients by chopping the beef and vegetables.
- In a large pot over medium-high heat, add olive oil and brown the beef in batches until golden (about 5 minutes per batch). Remove from pot.
- In the same pot, saut? onions and garlic until softened (about 3 minutes). Add carrots and potatoes; stir well.
- Return the browned beef to the pot. Stir in tomato paste and thyme.
- Pour in beef broth and add bay leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for at least 2 hours until meat is tender.
- Taste and adjust seasoning as needed before serving.
