  • 1 can (14.5 oz) diced tomatoes in juice
  • 4 cups low-sodium beef broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle olive oil and saut? chopped onions, carrots, and celery until softened (about 5 minutes).
  2. Push the vegetables aside and add ground beef; cook until browned (6-8 minutes).

  5. Bring to a boil, then reduce heat to low; cover and simmer for about 30 minutes or until lentils are tender.
  6. Taste and adjust seasoning with salt and pepper before serving.

Notes

For added depth of flavor, include bay leaves during simmering and remove before serving.

Feel free to add other vegetables like spinach or potatoes depending on your preference.
