Ingredients
- 1 lb lean ground turkey
- 1 medium spaghetti squash (about 2 lbs)
- 1 can (15 oz) fire-roasted diced tomatoes

Instructions
- Preheat your oven to 400?F (200?C). Spray a baking dish with nonstick cooking spray.
- Cut the spaghetti squash in half lengthwise, scoop out the seeds, and brush the insides with olive oil. Season with salt and pepper before placing cut-side down in the baking dish.
- Roast the squash in the oven for about 30-35 minutes until tender.
- In a skillet over medium heat, add olive oil and saut? diced onion and minced garlic for about 5 minutes until translucent.
