Description

  • 2 tbsp matcha powder
  • 1 tsp baking powder
  • 2 tbsp granulated sugar
  • 1 cup whole milk (or almond/oat milk)
  • 2 large eggs
  • 2 tbsp melted butter (or coconut oil)

Instructions

  1. In a medium bowl, whisk together flour, matcha powder, baking powder, and sugar until well combined.
  2. In another bowl, beat the eggs, then mix in the milk and melted butter until blended.
  3. Pour the wet mixture into the dry ingredients and gently fold until just combined; avoid over-mixing.
  4. Preheat a non-stick skillet over medium heat; lightly grease it.
  5. Pour about half a cup of batter onto the skillet. Cook until bubbles form on top (about 3 minutes), then flip and cook for another 2 minutes until golden brown.
  6. Serve warm with maple syrup and fresh fruit toppings.
