  • 1 lb boneless, skinless chicken breasts
  • 8 oz flat rice noodles
  • 3 cloves garlic, minced
  • 4 green onions, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 1/4 cup peanut butter
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients by chopping the chicken and mincing the garlic.
  2. Set the Instant Pot to saut? mode. Add oil and minced garlic; cook until fragrant (about 1 minute).
  3. Add chicken pieces to the pot and saut? until lightly browned (about 3-4 minutes).
  4. Pour in rice noodles and all sauce ingredients. Mix well.
  5. Seal the lid and set to high pressure for 3 minutes. After cooking, perform a quick release.
  6. Stir in chopped green onions and cilantro before serving hot with lime wedges on the side.
