  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup fresh lime juice (about 2 limes)
  • 3 tbsp fish sauce
  • 2 small chili peppers, finely chopped (adjust to taste)
  • 1/4 cup shallots, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup cooked jasmine rice

Instructions

  1. Rinse the shrimp under cold water and pat dry.
  2. In a bowl, mix lime juice, fish sauce, chili peppers, and shallots until well combined.
  3. Add the shrimp to the marinade and refrigerate for 15-20 minutes.
  4. Heat a skillet over medium-high heat with a splash of oil. Add marinated shrimp and cook for 3-5 minutes until pink and opaque.
  5. Remove from heat and stir in chopped cilantro.
  6. Plate shrimp alongside jasmine rice and drizzle remaining marinade over top.
