- 4 large bell peppers (red, yellow, or green)
- 1 pound boneless, skinless chicken breasts, diced
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons fajita seasoning
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Juice of 1 lime
Instructions
- Preheat the oven to 375?F (190?C) and lightly spray a baking dish with nonstick cooking spray.
- Prepare the bell peppers by cutting off the tops and removing the seeds. Place them upright in the baking dish.
- In a skillet over medium heat, add olive oil and saut? diced chicken with minced garlic and sliced onion until cooked through (7-10 minutes). Season with fajita seasoning.
- Stir in lime juice and mix thoroughly before spooning the chicken mixture into each bell pepper generously. Top with shredded cheese.
- Cover with aluminum foil and bake for 25 minutes; remove foil and bake for an additional 5 minutes until cheese is melted.
