Ingredients

  • 1 cup quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. Combine with 2 cups water or vegetable broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed. Let cool.
  2. While quinoa cooks, dice cucumber, halve cherry tomatoes, chop red onion, and crumble feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  4. In a large bowl, combine cooked quinoa with chopped veggies and feta.
  5. Drizzle dressing over the salad and toss to coat evenly.
  6. Serve chilled or at room temperature.
