- 1 lb lean ground beef (80/20)
- 1 cup plain breadcrumbs
- 2 large eggs
- 1 medium onion, finely chopped
- 3/4 cup ketchup (divided)
- 5 medium russet potatoes
- 1/2 cup unsalted butter
- 1/2 cup whole milk
- Salt and pepper to taste
Instructions
- Preheat oven to 350?F (175?C) and grease a loaf pan.
- In a large bowl, mix ground beef, breadcrumbs, eggs, chopped onion, salt, pepper, and half of the ketchup until just combined.
- Shape the mixture into a loaf in the prepared pan and spread remaining ketchup on top.
- Bake for about 1 hour or until internal temperature reaches 160?F (70?C).
- While baking, peel and chop potatoes; boil in salted water until tender (about 15 minutes). Drain and return to pot.
- Add butter and milk to potatoes; mash until smooth or leave some lumps if desired. Season with salt and pepper.
