Ingredients

  • 1 teaspoon spirulina powder
  • 2 cups low-sodium vegetable broth
  • 2 tablespoons olive oil
  • 1 cup fresh bell peppers (chopped)
  • 1 cup spinach or kale (optional)

  • ? teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa in cold water until clear. In a saucepan, combine rinsed quinoa and vegetable broth; bring to a boil.
  2. Reduce heat, cover, and simmer for 15 minutes until liquid is absorbed. Stir in spirulina powder.
  3. In a skillet, heat olive oil over medium heat; saut? chopped bell peppers for about 5 minutes until tender.
  4. Add cumin, paprika, salt, and pepper to vegetables; stir to combine.
  5. Mix cooked quinoa with saut?ed veggies in a large bowl until well combined.
