Ingredients

2 cups cooked sweet corn

1 medium red bell pepper, diced

1/2 medium red onion, finely chopped

1/2 cup fresh cilantro, chopped

1/2 cup crumbled Cotija cheese

Juice of 1 large lime

1/4 cup mayonnaise

Salt and pepper to taste


Instructions
