Ingredients

  • 4 cups fresh tomatoes, chopped (about 1 lb)
  • 1 medium onion, sliced
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. Rinse and chop the tomatoes; place them on the baking sheet.
  3. Add sliced onions and minced garlic over the tomatoes.
  4. Drizzle olive oil on top and season with brown sugar, salt, and pepper. Toss gently to coat.
  5. Roast in the oven for 25-30 minutes until soft and slightly charred.
  6. Let cool slightly, then blend in a food processor with apple cider vinegar until desired consistency is reached.
