Ingredients

  • 2 medium eggplants (about 450g)
  • 4 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 100g feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • Salt to taste

Instructions

  1. Preheat your oven to 400?F (200?C). Line a baking sheet with parchment paper.
  2. Slice each eggplant in half lengthwise and scoop out some flesh gently. Drizzle with 2 tbsp olive oil and sprinkle with salt.
  3. Place eggplants cut-side down on the prepared baking sheet and roast for about 25 minutes until tender.
  4. In a bowl, mix together minced garlic, feta cheese, parsley, lemon juice, and the remaining olive oil.
  5. Flip the roasted eggplants cut-side up and pile on the topping mixture. Drizzle more olive oil on top.
  6. Return to the oven and bake for another 10-15 minutes until golden brown and bubbly.
