- 2 medium eggplants (about 450g)
- 4 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 100g feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- Salt to taste
Instructions
- Preheat your oven to 400?F (200?C). Line a baking sheet with parchment paper.
- Slice each eggplant in half lengthwise and scoop out some flesh gently. Drizzle with 2 tbsp olive oil and sprinkle with salt.
- Place eggplants cut-side down on the prepared baking sheet and roast for about 25 minutes until tender.
- In a bowl, mix together minced garlic, feta cheese, parsley, lemon juice, and the remaining olive oil.
- Flip the roasted eggplants cut-side up and pile on the topping mixture. Drizzle more olive oil on top.
- Return to the oven and bake for another 10-15 minutes until golden brown and bubbly.
