  • 1 cup green or brown lentils (rinsed)
  • 1 medium onion (diced)
  • 2 carrots (chopped)
  • 2 garlic cloves (minced)
  • 4 cups low-sodium vegetable broth
  • 1 teaspoon ground cumin
  • 12 bay leaves
  • Olive oil for saut?ing
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and saut? diced onion until translucent (about 5 minutes). Add minced garlic and chopped carrots; cook for another 3 minutes.
  2. Stir in the rinsed lentils, cumin, and bay leaves; mix well.
  3. Pour in the vegetable broth and bring to a rolling boil. Reduce heat to low, cover, and simmer for about 30 minutes.
  4. Check the lentils for tenderness; cook longer if necessary. Remove bay leaves before serving.
  5. Season with salt and pepper to taste; serve warm.
