Ingredients

  • 1 cup tri-color quinoa
  • 1 cup green or brown lentils
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Fluff with a fork.
  2. In another saucepan, combine lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain excess liquid.
  3. While the grains are cooking, chop cherry tomatoes, cucumber, red onion, and parsley.
  4. In a large bowl, mix cooked quinoa and lentils with chopped veggies. Drizzle with olive oil and lemon juice; season with salt and pepper.
  5. Toss well to combine all ingredients evenly.
  6. Serve immediately or chill for an hour to deepen flavors.
