Description

  • 2 cups cheese tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini)
  • 1/2 cup fresh basil leaves, torn
  • 3 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente (about 3-4 minutes for fresh).
  2. While the tortellini cooks, rinse and halve the cherry tomatoes.
  3. Drain the tortellini and let it cool slightly. In a large bowl, combine the tortellini, halved tomatoes, mozzarella balls, and torn basil leaves.
