Instructions

  1. Rinse the wild rice under cold water until the water runs clear. Soak in water for about an hour.
  2. In a large skillet, heat olive oil over medium heat. Saut? the chopped onion and diced celery until softened (about 5 minutes).
  3. Add the soaked rice and vegetable broth to the skillet. Bring to a boil, cover, and reduce heat to low. Simmer for 45 minutes or until most liquid is absorbed and the rice is tender.
  4. Stir in dried cranberries and toasted almonds. Cook uncovered on low heat for an additional 5 minutes.
  5. Season with salt and pepper, then garnish with chopped parsley before serving.
