Ingredients

  • 4 cups chopped carrots (about 500g)
  • 1 medium onion, chopped
  • 2 tbsp fresh ginger, grated
  • 4 cups low-sodium vegetable broth
  • 2 tsp spirulina powder
  • 1 cup full-fat coconut milk (240ml)
  • Salt & pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil and saut? the chopped onion until translucent (about 5 minutes).
  2. Add the chopped carrots and grated ginger; saut? for an additional 3 minutes.
  3. Pour in the vegetable broth and bring to a gentle boil. Simmer for about 15 minutes until the carrots are tender.
  4. Carefully blend the mixture until smooth, adding spirulina powder while blending.
  5. Return the soup to the pot; stir in coconut milk and simmer on low for another 5 minutes.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
