Ingredients

  • 4 cups fresh baby spinach
  • 1 cup ripe strawberries, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts, toasted
  • 1/2 cup ripe strawberries (for vinaigrette)
  • 3 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the baby spinach thoroughly. Slice the strawberries and set aside.
  2. Thinly slice the red onion. In a dry skillet over medium heat, toast the walnuts until golden brown.
  3. For the vinaigrette, blend additional strawberries, balsamic vinegar, olive oil, honey, salt, and pepper until smooth.
  4. In a large bowl, combine baby spinach, sliced strawberries, red onion, feta cheese, and toasted walnuts.
  5. Drizzle the vinaigrette over the salad just before serving and toss gently.
