- 1/4 cup walnuts, toasted
- 1/2 cup ripe strawberries (for vinaigrette)
- 3 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Wash and dry the baby spinach thoroughly. Slice the strawberries and set aside.
- Thinly slice the red onion. In a dry skillet over medium heat, toast the walnuts until golden brown.
- For the vinaigrette, blend additional strawberries, balsamic vinegar, olive oil, honey, salt, and pepper until smooth.
