Ingredients

  • 1 cup sushi rice
  • 2 sheets nori
  • 1 ripe avocado, sliced
  • 6 oz ceviche-style fish (tilapia or salmon), marinated in lime juice
  • 1 medium sweet potato, boiled or roasted and cut into strips
  • For Spicy Mayo: 2 tbsp mayonnaise + 1 tbsp sriracha
  • For Dipping: Soy sauce

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes) and let cool.
  2. Marinate diced fish with lime juice, cilantro, and salt for about 10 minutes.
  3. Prepare sweet potato by boiling or roasting until tender; slice into strips.
  4. Lay nori on a bamboo mat. Spread sushi rice evenly, leaving an inch at the top.
  5. Layer marinated fish, avocado slices, and sweet potato along the bottom edge of rice.
  6. Roll tightly using the mat, sealing the edge with water.
  7. Slice into bite-sized pieces using a wet knife and serve with spicy mayo and soy sauce.
