  • 1 medium kabocha squash (about 2 lbs), cubed
  • 1 cup jasmine rice, rinsed
  • 1 can (14 oz) full-fat coconut milk
  • 2 cups low-sodium vegetable broth
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tsp salt
  • ? tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Slice the kabocha squash in half, scoop out seeds, and cube it.
  2. In a large pot, heat olive oil over medium heat. Saut? the onion and garlic until golden brown.
  3. Add the kabocha cubes, rinsed jasmine rice, coconut milk, vegetable broth, salt, and pepper. Stir well.
  4. Bring to a gentle boil. Reduce heat to low, cover, and simmer for about 20-25 minutes until the rice and squash are tender.
  5. Remove from heat and let rest for five minutes before fluffing with a fork.
  6. Serve warm; garnish with fresh herbs if desired.
