  • 1 medium green or red cabbage, sliced
  • 2 large sweet potatoes (about 500g), peeled and diced
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 cups (480ml) low-sodium vegetable broth
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ? tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the sweet potatoes. Dice them and slice the cabbage into thin ribbons. Chop the onion finely and mince the garlic.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Add onions and saut? until translucent (about 5 minutes).
  3. Stir in minced garlic, cumin, coriander, and cinnamon for about one minute until fragrant.
  4. Add diced sweet potatoes, sliced cabbage, and chickpeas. Pour in vegetable broth, stirring to combine.
  5. Cover and let simmer on low heat for 25 minutes or until sweet potatoes are tender but not mushy.
  6. Taste and adjust seasoning if necessary before serving warm.
