  • 2 (6 oz) salmon fillets
  • 1 cup wild rice
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, chopped
  • ? small red onion, thinly sliced
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water. Combine with 3 cups of water and a pinch of salt in a saucepan; bring to boil. Reduce heat, cover, and simmer for about 45 minutes until tender.
  2. Preheat oven to 400?F (200?C). Place salmon on a lined baking sheet; season with salt and pepper. Bake for 12-15 minutes until flaky.
  3. While cooking, chop cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. Assemble bowls: start with wild rice as the base, top with salmon and chopped veggies.
  6. Drizzle with dressing before serving warm.
