  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tbsp matcha powder
  • 1/2 cup sweet red bean paste

Instructions

  1. Preheat the oven to 350?F (175?C). Mix graham cracker crumbs and melted butter; press into a springform pan.
  2. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in matcha powder.
  3. Pour half of the filling over the crust. Add dollops of sweet red bean paste and swirl gently with a knife. Pour remaining filling over the top.
  4. Bake for 50-60 minutes until edges are set but center is slightly jiggly.
  5. Cool completely before refrigerating for at least four hours. Serve chilled, topped with extra sweet red bean paste if desired.
