  • 1 medium red bell pepper, diced
  • 1 lb boneless, skinless chicken breast, sliced into thin strips
  • 1 cup full-fat coconut milk
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 2 tbsp fresh lime juice

Instructions

  1. Prep your ingredients by cutting the pineapple and red bell pepper into bite-sized pieces and slicing the chicken breast.
  2. Marinate the chicken in a bowl with soy sauce, coconut milk, ginger, and lime juice for at least 30 minutes.
