  • 4 cups mixed greens (baby spinach or arugula)
  • 1 cup candied pecans
  • 1 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 1 apple, thinly sliced (Honeycrisp or Granny Smith)
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. If making candied pecans from scratch, preheat the oven to 350?F (175?C). Mix 1 cup of pecans with 1/2 cup brown sugar and a pinch of salt. Spread on a parchment-lined baking sheet and bake for 10-12 minutes until golden.
  3. While the pecans are baking, slice the apple into thin wedges.
  4. In a large bowl, combine mixed greens, apple slices, dried cranberries, and crumbled feta cheese; toss gently.
  5. Once cooled, sprinkle candied pecans over the salad.
  6. Drizzle balsamic vinaigrette just before serving and toss lightly.
