Ingredients
400 ml full-fat coconut cream
2 tablespoons unflavored gelatin powder
100 grams granulated sugar
200 grams high-quality dark chocolate (70% cocoa or more)
50 grams desiccated coconut (for garnish)
Instructions
Prepare silicone dome molds by lightly greasing them and placing them on a tray.
In a mixing bowl, whip chilled coconut cream with sugar until soft peaks form. Dissolve gelatin in warm water and fold it into the whipped cream gently.
Spoon the coconut mixture into the molds, leaving space for the chocolate layer, then freeze for at least two hours until firm.
Melt dark chocolate until smooth. Once the coconut domes are set, dip each one into the melted chocolate and place on parchment paper to cool.
