  • 1 tbsp Dijon mustard
  • ? cup apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Finely shred the cabbage and grate the carrot. Roughly chop the walnuts.
  2. In a bowl, whisk together Dijon mustard, apple cider vinegar, olive oil, honey, salt, and pepper until smooth.
  3. In a large mixing bowl, combine shredded cabbage, grated carrot, and chopped apple. Toss gently to mix.
  4. Add toasted walnuts to the veggie mixture and toss again for even distribution.
  5. Drizzle dressing over the slaw and mix until well coated.
  6. Chill in the refrigerator for at least one hour before serving.
