Description

Watermelon Sugar Cookies are a delightful twist on traditional sugar cookies, infusing each bite with the refreshing flavor of watermelon.

Ingredients

  • All-Purpose Flour
  • Baking Powder
  • Unsalted Butter
  • Granulated Sugar
  • Eggs
  • Fresh Watermelon (mashed)

Instructions

  1. Preheat your oven to 350?F (175?C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour and baking powder; set aside.
  3. In another bowl, cream together butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gently fold in the mashed watermelon until evenly distributed.
  5. Gradually combine the wet and dry mixtures without overmixing to maintain texture.
  6. Drop rounded balls of dough onto prepared sheets about two inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden.

Notes

Use fresh watermelon for the best flavor; make sure to drain excess moisture.

For added fun, sprinkle colored sprinkles on top before baking.

You can refrigerate the dough up to two days in advance to enhance flavors.
