  • 200g fresh shiitake mushrooms, sliced
  • 4 cups vegetable broth

  • 3 tbsp low-sodium soy sauce
  • 2 green onions, sliced thinly
  • 100g fresh spinach
  • 2 soft-boiled eggs (optional)
  • sesame seeds for garnish (optional)

Instructions

  2. Add shiitake mushrooms to the pot and cook for about 10 minutes until tender.
  3. Cook ramen noodles according to package instructions until al dente.
