  • 2 ripe bananas, mashed
  • 1 cup plant-based milk (almond or oat)
  • 2 tsp baking powder
  • 1 tsp cinnamon

Instructions

  1. Blend the rolled oats in a blender until they reach a flour-like consistency.
  2. In a large bowl, mix the blended oats with baking powder and cinnamon. Add the mashed bananas and plant-based milk; stir until combined (lumps are okay).
  3. Heat a non-stick skillet over medium heat, adding oil if desired.
  4. Pour ? cup of batter onto the skillet for each pancake; cook until bubbles form (about 3 minutes), then flip and cook until golden brown (about 2 minutes).
