Ingredients
4 cups chopped fresh tomatoes (or 2 cans diced tomatoes)
1 cup dried green or brown lentils
1 medium onion, finely chopped
2 medium carrots, diced
2 stalks celery, diced

6 cups low-sodium vegetable broth
2 tablespoons extra virgin olive oil
Instructions
