  • 1 cup mashed sweet potatoes (about 1 medium sweet potato)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ? cup fresh cilantro (optional)
  • 1 large egg
  • ? cup panko breadcrumbs
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
  2. Boil peeled and cubed sweet potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly before mashing.
  3. In a mixing bowl, combine the mashed sweet potatoes, lightly mashed black beans, chopped onion, minced garlic, cilantro (if using), egg, panko breadcrumbs, cumin, paprika, salt, and pepper. Mix well.
  4. Form the mixture into patties about an inch thick and place them on the prepared baking sheet.
  5. Bake for 25-30 minutes or until golden brown and crispy on both sides, flipping halfway through cooking.
  6. Allow the patties to cool slightly before serving or packing into lunch boxes.
