- 1 cup mashed sweet potatoes (about 1 medium sweet potato)
- 1 can (15 oz) black beans, drained and rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced

- ? cup panko breadcrumbs
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
- Boil peeled and cubed sweet potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly before mashing.
- In a mixing bowl, combine the mashed sweet potatoes, lightly mashed black beans, chopped onion, minced garlic, cilantro (if using), egg, panko breadcrumbs, cumin, paprika, salt, and pepper. Mix well.
- Form the mixture into patties about an inch thick and place them on the prepared baking sheet.
- Bake for 25-30 minutes or until golden brown and crispy on both sides, flipping halfway through cooking.
- Allow the patties to cool slightly before serving or packing into lunch boxes.
