Ingredients
20–24 jumbo pasta shells
2 cups ricotta cheese
1 cup shredded mozzarella cheese (plus more for topping)
? cup grated Parmesan cheese
2 cups fresh spinach
2 cups marinara sauce
1 large egg
Salt and pepper to taste
Instructions
Preheat oven to 375?F (190?C). Cook pasta shells according to package instructions; drain.
In a bowl, mix ricotta, mozzarella, Parmesan, spinach, egg, salt, and pepper until combined.
Spread half of the marinara sauce in a baking dish. Fill each shell with the cheese mixture and arrange them in the dish. Top with remaining sauce and mozzarella.
Cover with foil and bake for 30-40 minutes until heated through. Remove foil for the last 10 minutes to brown the cheese.
